A special chocolate treat always has a way of making Valentine’s Day extra special. These chocolate dipped strawberries won’t disappoint and just may be the perfect ending to a delicious lunch or dinner.

As if the wonderful flavor wasn’t enough, both organic strawberries and dark chocolate are full of antioxidants, plus the calcium and magnesium in chocolate can help ensure a relaxed, restful sleep. Adding a touch of cream to the recipe acts as a stabilizer, helping the chocolate set quickly without the need to heat to a certain temperature. Ingredients

7 oz. Dark Organic Chocolate (70% Cacao)
3 TBS Heavy cream (if dairy free, replace with full fat coconut milk)
1/4 tsp cinnamon *optional (Saigon cinnamon is my favorite)
12 long stemmed large strawberries (preferably organic)
Mint leaves *optional for garnish

Directions

1. Line baking sheet with parchment or wax paper. Fill medium saucepan or double boiler with 1″ water, bring to boil.

2. Put 4 oz of chocolate in top of double boiler or in a non-reactive bowl that fits snug on top of the pot with boiling water. Cover and let chocolate begin to melt for approximately 2-3 minutes. Remove bowl from the saucepan and cool for 3 minutes.

3. Then stir in remaining chocolate, cinnamon (if desired), and cream, stirring until chocolate is melted.

3. Hold strawberries by stem, dip halfway into chocolate. Gently scrape some chocolate from one side and place strawberry on baking sheet with this side down. Repeat with remaining strawberries and chocolate, then refrigerate for at least 15 minutes until chocolate has hardened.

4. Serve garnish with mint leaves.
