Apple Cinnamon Oatmeal
While working on your New Year's healthier habits, adding a wholesome breakfast is a great way to start the family off in the morning feeling warm, energized, and ready to start the day. Oatmeal along with fresh fruit provides us with the protein, grains, and nutrients we need. When it tastes more like apple pie without all the sugar, everyone will love it!
Crisp, green apple with cinnamon can make your morning oatmeal taste almost like eating a delicious homemade apple pie. It's an easy recipe and can be made in batches to cover a couple of days, if desired. Serves 2
- 1 large green (Granny Smith) apple (peeled and sliced or cut in cubes)
- a squeeze lemon juice
- 1 tsp cinnamon (I like Saigon Cinnamon for it's stronger flavor)
- 1cup rolled oats
- 2 1/4 cup water or nonfat milk
- or
- 2 1/4 cup unsweetened Almond Milk (vanilla or plain)
- 1/4 cup almonds, roasted
- 1 teaspoon brown sugar
Directions
1. Peel and slice or cut the apple into small cubes and put in small saucepan. Add the cinnamon and sugar and simmer on low heat, stirring often. Cook for approximately 5 minutes, just until apples are slightly cooked and sugar is melted.
2. Place the oats and milk (or water) into another small saucepan over medium low heat. Bring to a gentle simmer and cook, stirring, for 2 minutes, or until the oatmeal is fully cooked. (This is for "quick cooking" oats. If using regular oats follow directions on package).
3. Once the oatmeal is cooked, place in bowls, add the sliced almonds on top, then the apple mixture and serve. Drizzle a little pour a little extra almond milk over the oatmeal if desired. Bon Apetit!
