Discovering an easy, no fail recipe for fresh peaches is a treasure during peach season. This recipe brings out the flavor of the peaches by lightly roasting or grilling them. Add in the wonderful hint of lemon, thyme, and cinnamon, it turns into pure delight! Enjoy it as a dessert topped with frozen yogurt, or store it in the refrigerator for a breakfast fruit side or an after school snack.

What you need:

  • 4 fresh peaches (preferably organic)
  • 1 tsp local honey
  • 1 ½ TBS EVOO (extra virgin olive oil)
  • ¼ tsp pure vanilla extract
  • ¼ – ½ tsp Saigon Cinnamon (sprinkle to taste)
  • 4 sprigs Lemon Thyme, removed from stems & chopped
  • 1 tsp fresh lemon juice (optional)

Directions:

  1. Rinse the peaches, pat dry then slice around the center to split in 2 halves, removing the pit. ** If preferred, you can peel the peaches but do this prior to splitting them.
  2. Arrange the peach halves in baking dish, then mix all the remaining ingredients and pour over the peaches. Let them marinade for about 20 minutes (the longer they sit, the more flavorful they will be.
  3. Broil (or place on grill) for 2-3 minutes on each side, until the peaches are tender but not too soft. Then serve!

Note:  You can refrigerate any remaining peaches. They make a great side fruit with breakfast, sliced on oatmeal, or a school snack!
