Valentine’s Day is not complete without those little indulgences of chocolate. This treat is the perfect ending to the day and it even has a healthy flair without skimping on the yummy factor.
The organic strawberries are full of antioxidants and vitamin C, while the dark chocolate gives us antioxidants, may enhance mood with it’s serotonin boosting qualities, plus calcium and magnesium for a relaxed, restful sleep. Adding a touch of cream to the recipe acts as a stabilizer, helping the chocolate set quickly without the need to heat to a certain temperature. The best part; you can cook and be ready to serve within 30 minutes!
Chocolate Dipped Strawberries
Ingredients
7 oz. Dark Chocolate (70% Cacao)
4 Tbs heavy or whipping cream (*for dairy free version, replace with full fat coconut milk)
1/4 tsp cinnamon *optional (Saigon cinnamon is my favorite)
12 long stemmed large strawberries (preferably organic)
Mint leaves *optional for garnish
Directions
1. Line baking sheet with parchment or wax paper. Fill medium saucepan or double boiler with 1″ water, bring to boil.
2. Put 4 oz of chocolate in top of double boiler or in a non-reactive bowl that fits snug on top of the pot with boiling water. Cover, letting chocolate begin to melt for approximately 2-3 minutes. Remove bowl from the saucepan & heat.
3. Then stir in remaining chocolate, cinnamon (if desired), and cream. Return to heat stirring until chocolate is melted.
3. Hold strawberries by stem, dip halfway into chocolate. Gently scrape some chocolate from one side and place strawberry on baking sheet with this side down. Repeat with remaining strawberries and chocolate, then refrigerate for at least 15 minutes until chocolate has hardened.
4. Serve garnish with mint leaves.
