Serves 4 – 6 as side dish
If you’re ready for a refreshing summer treat with a little punch, try this zesty take on watermelon salad. The flavors of the lime, basil and avocado’s combine well with the jalapeno slices to give it that little punch and make it stand out from the normal summer salads. - 3 Tbs. lime juice
- 2 Tbs. Extra Virgin Olive Oil
- ⅛ tsp. lime zest
- 3 cups seedless watermelon, cut into ½-inch cubes
- 1 avocado (peeled and cut into ¼ – ½ “ chunks
- 1 jalapeño pepper, seeded and sliced
- ¼ cup basil or Thai basil, cut into thin strips
- ½ tsp. sea salt
1. Whisk together lime juice, oil and lime zest. Set aside.
2. Place watermelon and avocado cubes in a large bowl. Pour the lime juice mixture over watermelon & avocado and gently toss. Add jalapeno rings, ½ of basil, and salt and mix well. Cover, and refrigerate until ready to serve.
3. Before serving add salt, mix again, and top with remaining basil and serve.
